Vegetable cutlet is a quick and delicious Indian snack recipe often served as a tea time snack. These are made from potatoes and other vegetables like carrots, beans, green peas and cabbage. It is crispy and crunchy outside and very soft inside.

These are endlessly delicious when served with chutneys or some other dips like tomato ketchup.

Preparation of vegetable filling

  1. Heat 3 tablespoons of oil in a pan. Add chopped garlic, chopped ginger saute well till the raw smell goes.
  2. Now add chopped green chilli and onion and saute well till it become translucent.
  3. Add chopped French beans, cabbage, carrot, peas and potatoes and saute well.
  4. Add turmeric powder, Kashmiri chilli powder, garam masala, roasted cumin powder and mix well. Cover and cook over medium flame. Stir occasionally. Cook till all vegetables are cooked completely.
  5. Now transfer it a bowl. Allow it to cool down slightly. Mash well. Mix with hands so that we can make ball shape from that.
  6. Now dip the vegetable mix which we already shaped in to the all- purpose flour batter and immediately roll it in the bread crumbs.
  7. Heat oil in a thick bottom vessel for deep fry.
  8. Now deep fry.Flip each side until golden brown.

Preparation of All – purpose flour batter

  1. Take 3 tablespoons of flour in a bowl. Add some salt also.
  2. Add water in batches in order to get a medium thick batter.

Preparation of bread crumbs

  1. In a mixer grinder jar, add the bread pieces and give 2-3 pulses. Bread crumbs ready.
  2. Transfer it to a plate in order to coat the cutlets easily.
